Our first bottling of oat whisky with only 56 bottles. A smooth and spicy whisky with earthy notes and an oily mouthfeel from the oats, which make up more than 50% of the whisky. Single-distilled from a blend of oats, rye, and barley. Aged in a single new oak cask for a little over four years.

As rare as an oat whisky

Around the world, a lot of whisky is distilled from barley, corn, wheat, and rye, but oats are often overlooked and rarely used in pot still distillery whisky.

Oats are a regular part of our organic crop rotation. So why not try making an oat whisky?

Oats contain more protein, fats, and dietary fiber than other grains and yield a relatively lower sugar extract, which can be converted to ethanol. But there is plenty of flavor to be found.

The taste of oats in a distillate is distinctly different from other grains. It imparts a creamy, earthy richness and mouthfeel reminiscent of oatmeal. After maturation in casks, the whisky becomes rich and full-bodied.

For this whisky, we chose to blend oats with rye for a touch of spice and warmth, and barley for balance and fruitiness.

New Oak Casks

Just like our Spelt-Rye, this oat whisky is matured in new oak casks that add a vanilla sweetness and spiciness from the fresh wood, which pairs perfectly with the warm peppery sweetness of the rye and the creamy richness and earthy notes from the oats.
