A vintage single malt

The old Danish Imperial barley creates a truly unique whisky. It brings a perfumed aroma of ripe grain fields, fresh citrus, and freshly cut grass into the whisky. After 5 years of aging in fruity Oloroso sherry casks and an American bourbon cask, the whisky has reached a balanced state with a pleasant sweetness and an aroma of berries and strawberry compote with vanilla.

This whisky is an example of a 'vintage' bottling, where all barrels used are distilled from our own 2019 harvest of Imperial barley. Vintage bottlings make particular sense with the old Danish varieties, as we find greater variance from year to year depending on the growing season’s weather conditions, compared to modern high-yield barley varieties.

HERITAGE IMPERIAL BARLEY

Imperial is one of our old Danish barley varieties. It’s been more than a century since it was a common sight in Danish fields, as it was replaced by higher-yielding varieties. We’ve brought it back because it contributes a flavor we don’t find in modern varieties. A counterpoint of unique Danish quality to the very narrow range of highly refined barley varieties cultivated in fields around the world today.
